Ingredients (serves 4)
- 2–2.5 lb chicken thighs or breasts
- 1/2 cup Aussom Aussie Barbie Sauce, plus extra for serving
- 1 tbsp olive oil
- 1 tsp kosher salt and 1/2 tsp black pepper
- 1 tsp garlic powder (or a light dusting of White Gold)
- Optional: 1 tsp Barbie Dust BBQ Seasoning under the skin or on the surface
- Lime wedges and chopped cilantro to finish
Steps
- Pat dry and season. Oil the chicken, then salt, pepper, and garlic. If using Barbie Dust, apply a thin even coat — it is seasoning, not a thick crust.
- Start on medium heat. Grill or roast at 375–400°F. Cook most of the way before saucing so fruit sugars do not scorch.
- Glaze late. In the last 8–10 minutes, brush Barbie Sauce in two thin coats, flipping once. Aim for lacquer, not puddles.
- Finish and rest. Pull at 165°F internal temperature. Rest five minutes. Warm a little extra Barbie Sauce for dipping.
- Serve. Lime, cilantro, and leftover sauce on the table. Pair with rice, grilled corn, or a simple slaw.

For sheet-pan ease, roast thighs 25–30 minutes and glaze the last eight. Keep the sauce off direct roaring flame.
